4. In humid conditions, our emulsifier excels at reducing viscosity and rapidly forming a chocolate sugar coat. It accelerates adhesion, enhancing binding and reducing the presence of small pores.
For optimal results in cocoa products, chocolate and its derivatives, candies, chocolate-coated products, and ice cream coatings, we recommend a maximum usage of 5.0g/kg. For oily-water fat emulsified products, 10g/kg is advised.
