Erythritol, also known as Erythritol, is a natural, zero-calorie, sucrose-filled sweetener with a clear sweetness similar to sucrose. It is a low calorie sweetener; a diluent for high intensity sweeteners. Can be used in chocolate, baked goods, candy, table sugar, soft drinks, etc
Main features:
(1) Low sweetness: the sweetness of Erythrose is only 60% -70% of sucrose. It has a cool taste, pure taste, and no post bitter feeling. It can be mixed with high power sweeteners to inhibit the bad flavor of high power sweeteners.
(2) High stability: it is very stable to acid and heat, and has high acid and alkali resistance. It will not decompose and change at temperatures below 329 ºC, and will not change color due to Maillard reaction.
(3) High Enthalpy change of solution: Erythrose has heat absorption effect when dissolved in water, and the Enthalpy change of solution is only 97.4KJ/KG, which is higher than that of glucose and Sorbitol. It is cool when eaten.
(4) High solubility: the solubility of Erythrose at 25 ºC is 36% (W/W). With the increase of temperature, the solubility of Erythrose increases, which is higher than that of glucose, Mannose and Arabinose alcohol, and is easy to crystallize and precipitate crystals.
(5) Low hygroscopicity: Erythrose is very easy to crystallize, but will not absorb moisture in 90% humidity environment. It is easy to crush to obtain powder products, which can be used on food surface to prevent food from moisture absorption and deterioration
