There are several different types of citric acid in food additives, mainly including the following:
1. Citric Acid
Use: The most common citric acid, widely used in food and beverages as an acidulant, flavoring agent, pH adjuster, preservative, etc. It can add sourness, balance sweetness, and help extend the shelf life of food.
Form: Usually exists in the form of anhydrous citric acid or citric acid monohydrate. Anhydrous citric acid is a pure white crystalline powder, while citric acid monohydrate contains water and usually appears in granular form.
2. Citric Acid Monohydrate
Use: This is a common form of citric acid, especially in the food and beverage industry. Compared with anhydrous citric acid, citric acid monohydrate has a higher water content and is often used in foods or beverages that require lower acidity, suitable for candy, beverages, dairy products, etc.
Form: White crystalline granules or powder, containing one water molecule.
3. Sodium Citrate
Use: Sodium citrate is a combination of citric acid and sodium salt. It is commonly used as a buffer, pH regulator and anti-coagulant, especially in soft drinks, dairy products, juices and processed foods.
Type: There are two forms, trisodium citrate (used to adjust pH) and disodium citrate (commonly used for food preservation).
4. Calcium Citrate
Use: Calcium citrate is mainly used as a calcium supplement and food enhancer, commonly found in nutritional supplements and fortified foods.
Form: Usually a white crystalline powder with good water solubility, which can help improve the bioavailability of calcium.
5. Potassium Citrate
Use: Potassium citrate is a potassium salt that is often used in food as a source of potassium. It can also adjust pH and improve the flavor of food. It is commonly used in beverages, jellies, candies and other foods.
Form: White crystals or granules with good solubility.
6. Magnesium Citrate
Use: Magnesium citrate is mainly used as a magnesium supplement and is also commonly used as a pH regulator in food and beverages.
Appearance: Usually white granules or powder, easily soluble in water.
