Sodium benzoate (chemical formula :C6H5CO2Na), sodium benzoate belongs to the acid preservative in the acidic environment corrosion effect is better, is a very commonly used food preservative, has the effect of preventing deterioration and acid, prolong the shelf life.  

Sodium benzoate is mostly white particles, odorless or slightly with benzoin odor, slightly sweet, convergence;  Easy to dissolve in water (room temperature)53.0g/100ml, PH around 8;  Sodium benzoate is also an acidic preservative, no bactericidal, bacteriostatic effect in the alkaline medium;  The optimal PH of preservative is 2.5-4.0, and the bactericidal effect of 5% solution is not very good at PH5.0.  Sodium benzoate is lipophilic, easy to penetrate the cell membrane into the cell body, interfere with the permeability of the cell membrane, inhibit the absorption of amino acids;  It can enter into the cell to ionize and acidify the alkali storage in the cell, inhibit the activity of the respiratory enzyme system of the cell, and prevent the condensation reaction of acetyl coA, so as to play the purpose of food preservative.
