    • Pasteurization: A critical step to ensure food safety, pasteurization involves heating the milk to a specific temperature (usually 72°C for 15 seconds or 63°C for 30 minutes) to kill harmful pathogens without significantly altering its nutritional value or taste. After pasteurization, the milk is rapidly cooled to storage temperature.

    • Product Formulation: Depending on the desired end products, milk may be further processed in different ways:• Fluid Milk Products: Pasteurized milk can be packaged as whole milk, skim milk, flavored milk, or lactose-free milk after fortification with vitamins and minerals if needed.

    • Dairy Fermented Products: For yogurt, kefir, and other fermented dairy products, pasteurized milk is inoculated with specific cultures and incubated under controlled conditions until the desired acidity and texture are achieved.

    • Cheese Production: Milk is coagulated using rennet or acid, cut to release whey, and then pressed and aged to produce various types of cheese.

    Purpose: heat the heat transfer fluid (water) to be circulated in the treatment tank, and transfer the heat to the mixture through heat conduction.
    -Hot fluid pump
    Purpose: circulate the heat transfer fluid from the heater and then move around the treatment tank.

    -Treatment tank
    Usage: container for mixing and heating ice cream raw materials.
    Description:

    The circulation of heat transfer fluid starts from the bottom and moves around the tank using an alveolar system (replacing the old system of copper pipe, half pipe system or related system rolling around the tank), allowing higher heat transfer rate and providing more energy saving.

    -Transfer tank
    Usage: ice cream mixture is stored in a tank after passing through a multi plate heat exchanger.

    Insulation between inner and outer tanks is made of polyurethane foam.

    -Delivery pump
    Purpose: transfer the heated mixture between tanks to homogenizer or multi plate heat exchanger.
    Refrigeration mechanical seal, specially designed for hot liquid and sanitary concept.
    Removable frame, fixed by quick closing fixture, easy to clean.
    CIP cleaning is allowed.
    -Line filter
    Purpose: to retain undissolved impurities and particles in the mixing tank.
    Material: 304 stainless steel. removable.
    Connect to the process with three clamps.
    -Heat exchanger
    Objective: to cool the homogeneous mixture and complete the pasteurization cycle.
    This cooling is through turbulent flow through the lines formed between the plates to form a thin line one millimeter thick. On one side of the plate, the product is cooled circularly; On the other side, the coolant flows in two stages in a counterclockwise direction: first, it uses water from the hydraulic circuit of the cooling tower to cool the mixture from 80 ºC to 40 ºC.
    Description:
    The countercurrent heat exchanger adopts 316 stainless steel plate and is insulated by removable nitrile rubber joint.
    Dual channel circuit:
    The first stage: due to the heat exchange with the water from the cooling tower, the mixture cooled at the temperature of 80 º C to 32 º c enters at the temperature of 28.0 º C and flows out at the temperature of 35.1 º C. the pressure on the mixture side decreases to 5.0 MCA and the pressure on the tower water side decreases to 0.5 MCA.
    The second stage: cooling the incoming mixture from 32.0 º C to 4.0 º C, which is due to heat exchange with 1500 L / h cooling water / alcohol solution. It enters at 2.0 º C and flows out at 7.0 º C. the pressure on the mixture side of 7.5 MCA and the cooling water side of 0.5 MCA decreases.
    -Water cooling device
    Purpose: provide cooling water between 1.0 º C and 6 º C to the second stage of multi plate heat exchanger.
