CACAO shell color is made by extracting, refining, concentrating and drying CACAO shell from water solution
Dark brown powder, soluble in water, insoluble in grease. The water solution is chocolate colored. Stable under neutral
conditions, pH < 4 is easy to precipitate, pH value increased, the solution color deepened, but the tone remains unchanged. Good heat resistance, light resistance and oxidation resistance. Acid resistant cocoa can replace caramel in beverage applications.
