Bromelain is a group of sulfhydryl hydrolytic protease extracted from Pineapple by bioengineering technology. Its molecular weight is 33000 and its isoelectric point is 9.55. Bromelain mainly comes from plant stem, so it is also called stem bromelain. The main component of bromelain is a kind of protease containing sulfhydryl group. At the same time, it also contains peroxidase, acid phosphatase, several protein inhibitors and organic active calcium. Use conditions:
The optimum pH is 6.0-8.0
The optimum temperature is 55 ºC.
